In organized crime groups, such as Sicilian or American crime families … the underboss is one of the key positions within their leadership structure. The underboss is, without question … the second-in-command!

What does this have to do with Match and Fable’s latest role?
Not much, really.

That said … our client is looking for a kitchen professional to work closely with the Executive Chef, as their second-in-command, Sous Chef … to keep things humming along!

POSITION:        SOUS CHEF
REPORTS TO:   EXECUTIVE CHEF
LOCATION:       GTA
INDUSTRY:       HOSPITALITY + RESTAURANTS

SUMMARY

This culinary leadership role requires hands-on performance and guidance for junior team members.

It also requires excellent execution of menu items while adhering to budgetary targets.
You will help direct culinary operations … under the guidance of a Chef.

RESPONSIBILITIES

Daily shift management, including labour controls and line check systems
Oversee all revenue periods and preparation and management of fresh made prep recipes
Management of prep charts ensuring freshness, shelf-life and proper food safe practices

REQUIREMENTS

Previous culinary leadership experience in a high volume, full-service restaurant kitchen required
Excellent high-volume culinary production skills
Team leadership in highly engaged kitchen area
The ability to provide consistent culinary and leadership direction during high revenue periods
Fluent in English (… both written and spoken)

REMUNERATION

SALARY: $50,000

THE ‘SHEEP FEET’ ROLE (OTE: $63,250)

As the story goes, the world’s first restaurant opened in Paris, in 1765.
Mr. Boulanger … (a soup salesman, turned tavern keeper) opened its doors with a single-item on the menu – sheep’s feet simmered in white sauce!

Unlike other food-type businesses operating at the time, such as taverns (alcohol) and cafes (coffee) … his business focused on food. Naturally, the idea of ‘going out to eat’ was a foreign notion – as people had always eaten meals at home.

Here’s the real interesting part; Boulanger claimed his special dish would restore people’s health.
And … it just so happens, the French word for restore is, restaurer.
You can thank us later … but, now you know how the word ‘restaurant’ came to be!

By the way … a local food union sued Boulanger for infringing on their right to sell cooked food. The union ended up losing their case … and the years that followed saw restaurants pop up … all across the country.

What does this have to do with Match and Fable’s latest role?
Not much, really.

That said, just yesterday … one of our favourite clients called Mark Vandyke to explain they’re in massive growth mode.  They need 5 (… yup, we just said, five) Restaurant Managers for their rapidly expanding operations.

RESPONSIBILITIES 

  • Handle day-to-day management of a restaurant
  • Provide leadership and instill pride among crewmembers
  • Establish and execute high standards of food quality and take steps to deliver great customer service
  • Manage staffing and scheduling needs
  • Administer management … and crewmember training


REQUIREMENTS

  • 3+ years’ experience in the hospitality or retail environment
  • Experience with P&L analysis
  • Ability to clear a background check
  • Capable of working flexible hours, days, shifts … including some holidays
  • Own reliable transportation


REMUNERATION

SALARY: $55,000
BONUS: $8,250 (paid quarterly)
ON-TARGET EARNINGS: $63,250

THE ‘NEXT EPISODE’ ROLE ($55,000+)

In July 1999, Andre Romelle Young (more commonly known as … Dr. Dre) released “The Next Episode”.

This was the third single from his second studio album – featuring Snoop Dogg, Kurupt and Nate Dogg.

Since that time … and as a result of his shrewd business sense, Dr. Dre moved on to producing albums for other artists and launching the wildly successful Beats by Dre headphones.

In May 2014 … Dre sold the Beats business to Apple … for a reported 3 billion dollars! Needless to say, he is now (by far) … the Richest Man in Hip-Hop!

Well … nothing, really!

That said … just as Dre moved on from rather humble beginnings in Compton … Mark Vandyke of Match and Fable is on the hunt for a Bar Manager who is ready to step into the ‘next episode’ of their career with our fantastic client in The Six!

POSITION:            BAR MANAGER
REPORTS TO:       GENERAL MANAGER
LOCATION:           TORONTO, ONTARIO
INDUSTRY:            RESTAURANT / LOUNGE

SUMMARY:   

With seating for 400+ … Match and Fable’s client is one of downtown Toronto’s greatest concepts. Put very mildly … this restaurant / lounge is absolutely stunning.

Our client is looking for a Bar Manager who knows what it takes to make the bar hum. Someone who can lead a team to represent the brand – impeccably!

RESPONSIBILITIES:

  • Create and promote and train staff in new specialty drinks
  • Prepare weekly schedules for bartender, barback and server staff … to effectively cover all shifts
  • Monitor beverage inventory … ensuring adequate stock and pours are in line with brand standards
  • Oversee cleanliness of staff and bar area
  • Review sales and beverage costs (reconciling inventory)
  • Ensure proper cash management
  • Dialogue with customers to promote the brand
  • Oversee preparation of beverages … ensuring highest quality of product and experience


REQUIREMENTS:

  • MUST HAVE: Creativity + Leadership
  • MUST HAVE: 2+ years’ experience as a Bar Manager
  • A genuine ‘hands-on’ management style … not an arm-chair quarterback!
  • Able to perform at a rapid pace while maintaining high attention to detail
